How to make Elderflower cordial

This is a simple easy recipe with few ingredients!

Ingredients:

  • 1.5 litres water

  • 2kg sugar (can be reduced to half if you think its too much like me)

  • 50g citric acid

  • 20 elder flower heads

  • 2 lemons

Method:

  1. Collect fresh flower heads on a sunny day (to make sure their open)

  2. Shake any insects off flower heads (do not wash as this will wash away pollen - which gives flavour)

  3. Peel lemons

  4. Add water, sugar and lemon rind to a pot and bring to the boil until sugar has melted and it has become a syrup consistency

  5. Allow mixture to cool down and then add inside of lemons, citric acid and flower heads to the mixture

  6. Leave mixture to sit for two days and remember to stir it occasionally each day

  7. After the two days, strain the mixture through a sieve and muslin cloth into your storage bottles

  8. Label and refridgerate

  9. Dilute cordial with water or sparkling water (it tastes extra good with that fizzinness) as and when you like
